Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup kalamata olives, pitted and sliced
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. In a medium saucepan, combine quinoa and water (or vegetable broth). Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until quinoa is fluffy and water is absorbed. Remove from heat and let cool.
  2. In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, parsley, and olives.
  3. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  4. Add the cooled quinoa to the vegetable mixture and pour the dressing over the top. Toss gently to combine.
  5. Serve immediately or chill in the refrigerator for 30 minutes to enhance the flavors.
