Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup kalamata olives, pitted and sliced
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. In a medium saucepan, combine the quinoa and water (or vegetable broth). Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and liquid is absorbed. Remove from heat and let it cool.
  2. In a large bowl, combine the cherry tomatoes, cucumber, red bell pepper, red onion, feta cheese, parsley, and olives.
  3. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.
  4. Once the quinoa has cooled, add it to the vegetable mixture. Pour the dressing over the salad and toss gently to combine.
  5. Taste and adjust seasoning if necessary. Serve chilled or at room temperature.
