Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. Rinse the quinoa under cold water. In a medium pot, combine quinoa and water, bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the water is absorbed. Fluff with a fork and let cool.
  2. In a large bowl, combine the diced cucumber, cherry tomatoes, red onion, feta cheese, and parsley.
  3. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  4. Add the cooled quinoa to the vegetable mixture and pour the dressing over the top. Toss gently to combine.
  5. Serve chilled or at room temperature.
