Ingredients:

  • 1 cup cooked rice
  • 2 large eggs
  • 2 tablespoons olive oil
  • 1 medium onion, thinly sliced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and sauté until translucent and slightly caramelized, about 5-7 minutes.
  2. While the onions are cooking, prepare the rice if not already cooked. You can use leftover rice or cook fresh rice according to package instructions.
  3. Once the onions are ready, push them to one side of the skillet and add the remaining tablespoon of olive oil to the other side. Crack the eggs into the skillet and cook until the whites are set and the yolks are still runny, about 3-4 minutes.
