Ingredients:

  • 1 cup rice
  • 2 cups water or vegetable broth
  • 2 large eggs
  • 3 tablespoons olive oil
  • 1 medium onion, finely sliced
  • Salt and pepper to taste
  • Fresh parsley or dill for garnish (optional)

Instructions:

  1. In a medium saucepan, bring the water or vegetable broth to a boil. Add the rice, reduce heat to low, cover, and simmer for about 18-20 minutes until the rice is cooked and fluffy. Remove from heat and set aside.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onion and sauté until they are golden brown and caramelized, about 10-12 minutes. Season with salt and pepper.
  3. Push the onions to one side of the skillet and add the cooked rice to the other side. Mix gently to combine the rice with the onions. Drizzle with the remaining olive oil and stir to incorporate.
  4. In a separate small pan, heat a little olive oil over medium heat. Crack the eggs into the pan and cook sunny-side up or to your desired doneness.
  5. Top the rice mixture with the cooked eggs. Garnish with fresh parsley or dill, if desired. Serve warm.
