Ingredients:

  • 1 cup rice
  • 2 medium potatoes, peeled and diced
  • 1 large onion, sliced
  • 1 red capsicum, diced
  • 1 green capsicum, diced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup feta cheese, crumbled
  • Fresh parsley for garnish
  • 2 cups vegetable broth

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat. Add the sliced onions and sauté until they are caramelized, about 10 minutes.
  3. Add the diced potatoes to the skillet, stirring occasionally for about 5 minutes until they start to soften.
  4. Stir in the diced capsicum and cook for another 3-4 minutes.
  5. Add the rice, vegetable broth, oregano, paprika, salt, and pepper. Stir to combine and bring the mixture to a simmer.
  6. Once simmering, cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Bake for 30 minutes.
  7. Remove from the oven and uncover. Sprinkle crumbled feta cheese on top and return to the oven for an additional 10 minutes, or until the cheese is slightly golden.
  8. Garnish with fresh parsley before serving.
