Ingredients:

  • 2 bell peppers (any color), sliced
  • 1 medium butternut squash, peeled and cubed
  • 1 courgette (zucchini), sliced
  • 200g feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine the sliced bell peppers, cubed butternut squash, and sliced courgette.
  3. Drizzle with olive oil and add the minced garlic, oregano, thyme, salt, and pepper. Toss until the vegetables are well coated.
  4. Spread the vegetable mixture evenly on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized.
  6. Remove the baking sheet from the oven and sprinkle the crumbled feta cheese over the roasted vegetables.
  7. Return to the oven and bake for an additional 5-10 minutes, until the feta is warm and slightly golden.
  8. Garnish with fresh parsley before serving.
