Ingredients:

  • 2 salmon fillets
  • 1 cup cooked quinoa
  • 4 cups mixed greens (such as arugula, spinach, and romaine)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup kalamata olives, pitted and halved
  • 1/4 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1 teaspoon dried oregano

Instructions:

  1. In a bowl, combine the mixed greens, cherry tomatoes, kalamata olives, red onion, and crumbled feta cheese.
  2. In a small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and pepper to create the dressing.
  3. In a skillet over medium-high heat, add a tablespoon of olive oil. Season the salmon fillets with salt and pepper.
  4. Once the oil is hot, add the salmon fillets skin-side down and sear for about 4-5 minutes until the skin is crispy.
  5. Flip the salmon and cook for an additional 3-4 minutes until cooked through. Remove from heat and let rest for a minute.
  6. Meanwhile, toss the salad mixture with the dressing until well combined.
  7. Serve the salad on plates, topping each with a portion of cooked quinoa and a seared salmon fillet.
