Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 2 cups cherry tomatoes, halved
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onions and sauté until the onions are translucent.
  2. Add the shrimp to the skillet and cook until they turn pink and opaque, about 3-4 minutes. Season with salt and pepper.
  3. In a large bowl, combine the diced avocados and halved cherry tomatoes. Drizzle with lemon juice and gently toss to mix.
  4. Once the shrimp is cooked, let it cool slightly, then add it to the bowl with the avocado and tomatoes.
  5. Toss everything gently to combine. Adjust seasoning with additional salt and pepper if needed.
  6. Serve chilled or at room temperature, garnished with fresh parsley.
