Ingredients:

  • 8 oz spaghetti or linguine
  • 1 lb large shrimp, peeled and deveined
  • 2 medium roasted red peppers, sliced
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tbsp fresh basil, chopped (for garnish)
  • Juice of 1 lemon

Instructions:

  1. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 30 seconds until fragrant.
  3. Add the shrimp to the skillet and cook until they turn pink, about 2-3 minutes per side. Season with salt and pepper.
  4. Stir in the roasted red peppers and the reserved pasta water. Add the cooked pasta to the skillet, tossing everything together to combine.
  5. Finish with lemon juice and top with freshly grated Parmesan cheese.
  6. Garnish with chopped basil before serving.
