Ingredients:

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 lb shrimp, peeled and deveined
  • 1/2 cup craisins
  • 1/4 cup fresh parsley, chopped
  • 3 green onions, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions:

  1. Rinse the quinoa under cold water and then combine it with water or vegetable broth in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed.
  2. While the quinoa is cooking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the shrimp, seasoning with salt and pepper, and cook for about 2-3 minutes on each side until they are pink and opaque. Remove from heat and set aside.
  3. In a large bowl, combine the cooked quinoa, craisins, parsley, and green onions.
  4. In a small bowl, whisk together the remaining olive oil and lemon juice. Drizzle this dressing over the quinoa mixture and toss to combine.
  5. Add the cooked shrimp to the salad, gently mixing everything together. Adjust seasoning if needed.
  6. Serve warm or chilled, garnished with additional parsley if desired.
