Ingredients:

  • 1 lb ground beef
  • 1 cup couscous
  • 1 1/4 cups vegetable broth
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp ground cinnamon
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • Juice of 1 lemon
  • 2 tbsp olive oil

Instructions:

  1. In a skillet over medium heat, add olive oil and sauté the chopped onion until translucent, about 5 minutes. Add garlic and cook for another minute.
  2. Add the ground beef to the skillet, breaking it up with a spoon. Stir in cumin, smoked paprika, cinnamon, salt, and pepper. Cook until the beef is browned and cooked through, about 7-10 minutes.
  3. In a saucepan, bring vegetable broth to a boil. Stir in couscous, remove from heat, cover, and let sit for 5 minutes. Fluff with a fork and set aside.
  4. In a large bowl, combine the cooked couscous, cherry tomatoes, cucumber, and parsley. Drizzle with lemon juice and mix well.
  5. To serve, place a generous portion of the couscous salad on a plate, topped with the spiced beef mixture. Sprinkle with feta cheese if desired.
