Ingredients:

  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup milk
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/4 cup cherry tomatoes, halved (for garnish)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  3. Add chopped spinach to the skillet and cook until wilted. Remove from heat.
  4. In a mixing bowl, whisk together the eggs, milk, oregano, nutmeg, salt, and pepper.
  5. Fold in the sautéed spinach mixture and crumbled feta cheese.
  6. Pour the egg mixture into a greased 9-inch pie dish or baking dish.
  7. Bake for 25-30 minutes, or until the eggs are set and the top is lightly golden.
  8. Let cool slightly before slicing. Garnish with cherry tomatoes and fresh parsley before serving.
