Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • 1/2 cup chicken broth

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the chopped spinach, feta cheese, sun-dried tomatoes, minced garlic, oregano, thyme, salt, and pepper.
  3. Using a sharp knife, create a pocket in each chicken breast by cutting horizontally, being careful not to cut all the way through.
  4. Stuff each chicken breast with the spinach and feta mixture, securing with toothpicks if necessary.
  5. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  6. Add the lemon juice and chicken broth to the skillet. Bring to a simmer.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  8. Remove from the oven, let rest for a few minutes, then serve warm.
