Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • 1/2 cup chicken broth

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the chopped spinach, feta cheese, sun-dried tomatoes, minced garlic, oregano, thyme, salt, and pepper until well combined.
  3. Using a sharp knife, create a pocket in each chicken breast by slicing it horizontally, being careful not to cut all the way through.
  4. Stuff each chicken breast with the spinach and feta mixture, securing the opening with toothpicks if necessary.
