Ingredients:

  • 12 mini sweet peppers
  • 1 cup feta cheese, crumbled
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup kalamata olives, pitted and chopped
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cut the mini peppers in half lengthwise and remove the seeds.
  3. In a mixing bowl, combine the feta cheese, sun-dried tomatoes, kalamata olives, parsley, oregano, lemon juice, and olive oil. Mix well until the ingredients are evenly combined.
  4. Season the mixture with salt and pepper to taste.
  5. Stuff each mini pepper half with the feta mixture, pressing gently to pack it in.
  6. Arrange the stuffed peppers on a baking sheet and bake for 15-20 minutes, or until the peppers are tender and the filling is slightly golden.
  7. Remove from the oven and let cool slightly before serving.
