Ingredients:

  • 1 pound boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup feta cheese, crumbled
  • Fresh parsley, chopped for garnish

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken thighs with salt, pepper, oregano, and smoked paprika.
  3. Add the chicken to the skillet and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove and set aside.
  4. In the same skillet, add the onion and garlic, sauté until the onion is translucent.
  5. Add the bell pepper and zucchini, cooking until they are tender, about 5 minutes.
  6. Stir in the cherry tomatoes and cook for an additional 2 minutes.
  7. Return the chicken to the skillet, mixing everything together and allowing the flavors to meld for another 2-3 minutes.
  8. Remove from heat and sprinkle with crumbled feta cheese and fresh parsley before serving.
