Ingredients:

  • 4 large ripe tomatoes, sliced
  • 1 cup mushrooms, sliced
  • 1 medium onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the onions and garlic, sautéing until soft and translucent, about 5 minutes.
  3. Add the sliced mushrooms to the skillet and cook until they release their moisture and become tender, about 5-7 minutes.
  4. Stir in the dried oregano, thyme, red pepper flakes, salt, and pepper. Remove from heat.
  5. In a baking dish, layer half of the sliced tomatoes at the bottom. Spread the mushroom and onion mixture over the tomatoes, then layer the remaining tomatoes on top.
  6. Sprinkle the grated Parmesan and mozzarella cheese evenly over the top layer of tomatoes.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly and the tomatoes are soft.
  8. Remove from the oven and let it cool slightly. Garnish with fresh basil before serving.
