Ingredients:

  • 2 cups cooked rice
  • 2 large tomatoes, diced
  • 2 medium potatoes, thinly sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup vegetable broth
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix the cooked rice, diced tomatoes, minced garlic, oregano, thyme, paprika, salt, and pepper.
  3. In a greased baking dish, layer half of the sliced potatoes at the bottom.
  4. Spread the rice and tomato mixture evenly over the potatoes.
  5. Top with the remaining potato slices and drizzle with olive oil and vegetable broth.
  6. Cover the dish with aluminum foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and lightly golden.
  8. Garnish with fresh parsley before serving.
