Ingredients:

  • 1 cup long-grain rice
  • 2 cups vegetable broth
  • 1 can (14 oz) diced tomatoes, drained
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Juice of 1 lemon
  • 1/2 cup crumbled feta cheese
  • Fresh parsley or basil for garnish

Instructions:

  1. In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  2. Add the rice to the pan and stir to coat it in the oil. Cook for another 2-3 minutes, stirring frequently.
  3. Pour in the vegetable broth and add the drained diced tomatoes, oregano, paprika, salt, and pepper. Stir well and bring to a boil.
  4. Reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Once cooked, remove from heat and stir in the lemon juice. Fluff the rice with a fork.
  6. Serve the rice in bowls, topped with crumbled feta cheese and a sprinkle of fresh herbs.
