Ingredients:

  • 1 can of tuna, drained
  • 1 cup fresh or frozen peas
  • 1 cup diced carrots
  • 1 cup diced red peppers
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese (optional)
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the drained tuna, peas, diced carrots, and red peppers.
  3. Drizzle olive oil and lemon juice over the mixture and add oregano, garlic powder, salt, and pepper. Stir until well combined.
  4. Transfer the mixture to a greased baking dish and spread it evenly.
