Ingredients:

  • 1 can of tuna in olive oil, drained
  • 1/4 cup Kalamata olives, chopped
  • 2 tablespoons capers, rinsed and chopped
  • 1/2 small red onion, finely diced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 head of romaine lettuce, leaves separated
  • 1/4 cup cherry tomatoes, halved
  • Feta cheese for garnish (optional)

Instructions:

  1. In a medium bowl, combine the drained tuna, chopped olives, capers, diced onion, parsley, lemon juice, and olive oil.
  2. Season the mixture with salt and pepper to taste, and mix well until all ingredients are evenly distributed.
  3. Take a lettuce leaf and spoon a generous amount of the tuna mixture into the center.
