Ingredients:

  • 1 can of tuna, drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1 cup canned chickpeas, rinsed and drained
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. In a large mixing bowl, combine the drained tuna, cherry tomatoes, cucumber, red onion, chickpeas, olives, feta cheese, and parsley.
  2. In a separate small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper to create the dressing.
