Ingredients:

  • 1 can of tuna, drained
  • 2 large tomatoes, diced
  • 4 large eggs
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the drained tuna, diced tomatoes, chopped onion, minced garlic, parsley, oregano, salt, and pepper. Mix well.
  3. Transfer the mixture into a greased baking dish, spreading it evenly.
  4. Make four small wells in the mixture and crack an egg into each well.
  5. Sprinkle feta cheese over the top and drizzle with olive oil.
  6. Bake in the preheated oven for about 20-25 minutes, or until the eggs are set to your liking.
  7. Remove from the oven and let it cool slightly before serving.
