Ingredients:

  • 1 lb ground turkey
  • 1 cup bulgur wheat
  • 2 medium tomatoes, diced
  • 1 teaspoon smoked paprika
  • 1 large egg, beaten
  • 1 red onion, finely chopped
  • 2 cups chicken or vegetable broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a medium saucepan, bring the chicken or vegetable broth to a boil. Stir in the bulgur wheat, remove from heat, cover, and let it sit for about 15 minutes until the bulgur is tender and has absorbed the liquid.
  3. In a large skillet, sauté the chopped red onion over medium heat until translucent. Add the ground turkey and cook until browned, breaking it apart as it cooks.
  4. Stir in the diced tomatoes, smoked paprika, salt, and pepper. Cook for an additional 5 minutes until the tomatoes soften.
  5. In a large bowl, combine the cooked bulgur, turkey mixture, and beaten egg. Mix until well combined.
  6. Transfer the mixture to a greased baking dish and spread it out evenly.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is golden and set.
  8. Let it cool slightly before serving. Garnish with fresh parsley.
