Ingredients:

  • 1 lb ground turkey
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth or water
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon water (to thin the dressing)
  • Salt to taste

Instructions:

  1. In a medium saucepan, combine quinoa and vegetable broth (or water). Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until liquid is absorbed. Fluff with a fork and set aside.
  2. While the quinoa is cooking, heat olive oil in a large skillet over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic, ground cumin, smoked paprika, salt, and pepper to the skillet. Stir for about 30 seconds until fragrant.
  4. Add the ground turkey to the skillet, breaking it up with a spoon. Cook until browned and cooked through, about 7-10 minutes.
  5. In a small bowl, whisk together tahini, lemon juice, water, and a pinch of salt to create a dressing. Adjust consistency with more water if needed.
  6. To assemble the bowls, divide quinoa among serving bowls. Top with the cooked turkey, cherry tomatoes, cucumber, bell pepper, and parsley.
  7. Drizzle the tahini dressing over each bowl and serve immediately.
