Ingredients:

  • 4 large bell peppers (any color)
  • 1 pound ground turkey
  • 1 cup cooked quinoa
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup kalamata olives, chopped
  • 1/2 cup feta cheese, crumbled
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  3. In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, sautéing until translucent.
  4. Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until browned.
  5. Stir in the cooked quinoa, cherry tomatoes, olives, feta cheese, oregano, basil, salt, and pepper. Mix until well combined.
  6. Stuff each bell pepper generously with the turkey mixture.
  7. Place the stuffed peppers upright in a baking dish. If needed, add a little water to the bottom of the dish to help steam the peppers.
  8. Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender.
  9. Garnish with fresh parsley before serving.
