Ingredients:

  • 2 medium onions, sliced
  • 4 cloves garlic, minced
  • 2 cups sun-dried tomatoes, chopped
  • 2 large carrots, sliced
  • 2 bell peppers (any color), chopped
  • 1 cup fresh basil, chopped
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 cup grated mozzarella cheese (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the sliced onions, minced garlic, chopped sun-dried tomatoes, sliced carrots, and chopped bell peppers.
  3. Drizzle the olive oil over the vegetables and sprinkle with oregano, salt, and pepper. Toss to coat evenly.
  4. Transfer the vegetable mixture to a baking dish and spread it out evenly.
  5. If using, sprinkle mozzarella cheese over the top for a cheesy finish.
