Ingredients:

  • 1 medium eggplant, diced
  • 2 medium summer squashes, sliced
  • 1 large onion, sliced
  • 1 cup mushrooms, sliced
  • 2 cups tomatoes, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/2 cup feta cheese, crumbled (optional)
  • Fresh basil for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the diced eggplant, summer squash, onion, mushrooms, tomatoes, and bell pepper.
  3. Add the minced garlic, olive oil, oregano, basil, salt, and pepper. Toss everything together until well coated.
  4. Transfer the vegetable mixture to a large baking dish, spreading it evenly.
