Ingredients:

  • 2 medium zucchinis, sliced
  • 2 large carrots, peeled and sliced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup crumbled feta cheese
  • Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the sliced zucchini, carrots, and chopped onion.
  3. Add the minced garlic, dried oregano, dried thyme, salt, pepper, and olive oil to the vegetables. Toss until everything is evenly coated.
  4. Transfer the vegetable mixture to a baking dish and spread it out evenly.
  5. Bake in the preheated oven for about 25-30 minutes, or until the vegetables are tender and slightly caramelized.
  6. Remove from the oven and sprinkle with crumbled feta cheese. Return to the oven for an additional 5 minutes, just until the cheese starts to soften.
