Ingredients:

  • 1 medium aubergine, sliced
  • 2 medium courgettes, sliced
  • 200g mushrooms, sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 100g feta cheese, crumbled (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to 200°C (400°F).
  2. In a large mixing bowl, combine the sliced aubergine, courgette, mushrooms, and onion.
  3. Add minced garlic, olive oil, dried oregano, dried thyme, salt, and pepper. Toss until the vegetables are well coated.
