Ingredients:

  • 1 pizza dough (store-bought or homemade)
  • 1/2 cup tomato sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1/2 red onion, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Balsamic glaze for drizzling
  • Fresh basil leaves for garnish

Instructions:

  1. Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat.
  2. In a bowl, toss the sliced zucchini, red bell pepper, red onion, and cherry tomatoes with olive oil, oregano, basil, salt, and pepper.
  3. Spread the pizza dough on a floured surface to your desired thickness. Transfer to a pizza peel or a baking sheet lined with parchment paper.
  4. Spread the tomato sauce evenly over the dough, leaving a small border for the crust.
  5. Sprinkle the shredded mozzarella cheese over the sauce, followed by the roasted vegetable mixture.
  6. Top with crumbled feta cheese.
  7. Transfer the pizza to the preheated oven (or onto the pizza stone) and bake for 12-15 minutes, or until the crust is golden and the cheese is bubbly.
  8. Remove from the oven and drizzle with balsamic glaze. Garnish with fresh basil leaves before slicing and serving.
