Ingredients:

  • 200g yellow noodles
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 small onion, sliced
  • 1 carrot, julienned
  • 1 bell pepper, sliced
  • 100g bean sprouts
  • 2 green onions, chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon sambal oelek (chili paste)
  • 1 tablespoon tamarind paste
  • 1 teaspoon sugar
  • Salt to taste
  • Lime wedges for serving
  • Fresh cilantro for garnish

Instructions:

  1. Cook the yellow noodles according to package instructions, drain, and set aside.
  2. In a large pan or wok, heat the vegetable oil over medium-high heat.
  3. Add the minced garlic and sliced onion, stir-frying until fragrant and translucent.
  4. Add the julienned carrot and sliced bell pepper, stir-frying for about 2-3 minutes until they begin to soften.
  5. Push the vegetables to one side of the pan and add the cooked noodles to the other side.
  6. Pour the soy sauce, sambal oelek, tamarind paste, and sugar over the noodles. Toss everything together until well combined and heated through.
  7. Add the bean sprouts and chopped green onions, tossing gently for an additional minute.
  8. Season with salt to taste and serve hot with lime wedges and fresh cilantro on top.
