Ingredients:

  • 200g pasta (your choice, such as spaghetti or fettuccine)
  • 1 medium zucchini, sliced
  • 1 ripe banana, sliced
  • 1 medium apple, cored and diced (preferably a sweet variety like Fuji or Gala)
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish
  • Grated Parmesan cheese (optional, for serving)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving a bit of the pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the sliced zucchini to the skillet and cook until tender, about 5 minutes. Season with salt and pepper.
  4. Stir in the diced apple and cook for another 2-3 minutes until softened.
  5. Add the sliced banana and cooked pasta to the skillet. Gently toss everything together, adding a little reserved pasta water if needed to create a light sauce.
  6. Taste and adjust seasoning with additional salt and pepper as necessary.
  7. Serve hot, garnished with fresh basil leaves and a sprinkle of grated Parmesan cheese if desired.
