Ingredients:

  • 8 oz elbow macaroni
  • 4 cups sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 4 cups whole milk
  • 1/2 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup cooked bacon, crumbled
  • 1/2 cup barbecue sauce
  • 1/2 cup breadcrumbs
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Cook macaroni according to package instructions until al dente. Drain and set aside.
  3. In a large saucepan over medium heat, melt the butter. Stir in the flour to create a roux, cooking for about 2 minutes.
  4. Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, stirring frequently, until the sauce thickens, about 5-7 minutes.
  5. Add the garlic powder, onion powder, smoked paprika, black pepper, and cayenne pepper. Mix well.
  6. Remove the sauce from heat and stir in the cheddar, mozzarella, and Parmesan cheese until melted and smooth.
  7. In a large bowl, combine the cooked macaroni, cheese sauce, crumbled bacon, and barbecue sauce. Mix until well combined.
  8. Transfer the mixture to a greased baking dish. Top with breadcrumbs for a crunchy topping.
  9. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
  10. Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
