Ingredients:

  • 2 cups leftover taco meat
  • 4 cups tortilla chips
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup salsa
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh or frozen)
  • 1/2 cup sliced black olives
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, diced
  • Sour cream for serving (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a greased 9x13 inch baking dish, spread half of the tortilla chips evenly across the bottom.
  3. Layer half of the leftover taco meat over the chips, followed by half of the salsa, black beans, corn, and cheese.
  4. Repeat the layering process with the remaining ingredients: tortilla chips, taco meat, salsa, black beans, corn, and top with the remaining cheese.
  5. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  6. Remove from the oven and let it cool for a few minutes. Top with sliced olives, diced avocado, and fresh cilantro.
  7. Serve warm with a dollop of sour cream if desired.
