Ingredients:

  • 1 lb ground chicken
  • 2 tablespoons miso paste
  • 1 medium onion, finely chopped
  • 1 cup barley
  • 2 cups chicken broth or water
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions:

  1. Rinse the barley under cold water and drain.
  2. In a medium pot, bring chicken broth (or water) to a boil. Add the barley, reduce heat to low, cover, and simmer for about 30-35 minutes or until tender. Drain any excess liquid if necessary.
  3. In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  4. Add minced garlic and cook for an additional minute until fragrant.
  5. Increase heat to medium-high and add ground chicken. Cook until browned and fully cooked through, breaking it apart with a spatula, about 5-7 minutes.
  6. Stir in the miso paste, soy sauce, and sesame oil, mixing well. Cook for another 2-3 minutes until everything is well combined and heated through.
  7. Season with salt and pepper to taste.
  8. Serve the chicken mixture over a bed of barley, and garnish with chopped green onions.
