Ingredients:

  • 1 lb ground turkey
  • 1/2 cup breadcrumbs
  • 1/2 cup finely chopped onion
  • 1/2 cup grated carrot
  • 1/2 cup diced bell pepper
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 large egg
  • 1/4 cup milk
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup ketchup (for topping)
  • 1 tbsp brown sugar (for topping)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the ground turkey, breadcrumbs, chopped onion, grated carrot, diced bell pepper, chopped parsley, minced garlic, egg, milk, Worcestershire sauce, thyme, salt, and pepper. Mix until just combined.
  3. Transfer the mixture to a loaf pan and shape it into a loaf.
  4. In a small bowl, mix the ketchup and brown sugar together. Spread the mixture evenly over the top of the meatloaf.
  5. Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Let the meatloaf rest for 10 minutes before slicing and serving.
