Ingredients:

  • 2 large flour tortillas
  • 1 cup cooked chicken, shredded
  • 1 cup black beans, drained and rinsed
  • 1/2 cup cooked rice
  • 1 cup mole sauce (homemade or store-bought)
  • 1/2 cup shredded cheese (cheddar or Oaxaca)
  • 1/4 cup diced onions
  • 1/4 cup chopped cilantro
  • 1 avocado, sliced
  • 1 lime, cut into wedges
  • Salt and pepper to taste

Instructions:

  1. Warm the flour tortillas in a skillet over medium heat until pliable.
  2. In a bowl, mix the shredded chicken, black beans, cooked rice, diced onions, and half of the mole sauce. Season with salt and pepper.
  3. Lay one tortilla flat and spoon half of the chicken mixture onto the center.
  4. Drizzle some of the remaining mole sauce over the filling and add a sprinkle of cheese.
  5. Fold in the sides of the tortilla and roll it up tightly from the bottom to enclose the filling.
  6. Repeat with the second tortilla and remaining filling.
  7. Place the burritos seam side down in a skillet and cook for 2-3 minutes on each side until golden brown and the cheese is melted.
  8. Serve the burritos warm, garnished with avocado slices, chopped cilantro, and lime wedges.
