Ingredients:

  • 1 whole chicken (about 4 pounds), cut into pieces
  • 8 cups chicken broth
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 2 large eggs
  • Fresh parsley for garnish

Instructions:

  1. In a large pot, combine chicken pieces, chicken broth, onion, carrots, celery, garlic, thyme, rosemary, nutmeg, salt, and pepper. Bring to a boil.
  2. Reduce heat and let it simmer for about 45 minutes, or until the chicken is cooked through and tender.
  3. Remove the chicken from the pot, let it cool slightly, then shred the meat from the bones and return it to the pot.
  4. In a mixing bowl, combine flour, baking powder, and salt. In another bowl, whisk together milk, melted butter, and eggs.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  6. Drop spoonfuls of the dumpling batter into the simmering broth. Cover the pot and let them cook for about 15 minutes, or until the dumplings are fluffy and cooked through.
  7. Serve hot, garnished with fresh parsley.
