Ingredients:

  • 4 cups frozen shredded hash browns
  • 6 large eggs
  • 1 cup sliced mushrooms
  • 1 cup diced bell peppers (any color)
  • 1 cup diced onions
  • 1 cup diced turkey breast deli meat
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the diced onions, bell peppers, and mushrooms. Sauté until softened, about 5-7 minutes.
  3. Stir in the diced turkey breast and cook for an additional 2-3 minutes until heated through. Season with garlic powder, salt, and pepper. Remove from heat.
  4. In a large bowl, beat the eggs and mix in the sautéed vegetable and turkey mixture.
  5. In a greased 9x13 inch baking dish, spread the frozen shredded hash browns evenly across the bottom.
  6. Pour the egg and vegetable mixture over the hash browns, spreading it evenly. Top with shredded mozzarella cheese.
  7. Bake in the preheated oven for 35-40 minutes, or until the cheese is bubbly and golden and the eggs are set.
  8. Allow to cool for a few minutes before slicing. Garnish with chopped fresh parsley before serving.
