Ingredients:

  • 2 chicken breasts
  • 1 cup mushrooms, sliced
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup pico de gallo (made from diced tomatoes, onion, jalapeño, cilantro, lime juice, and salt)
  • Fresh cilantro for garnish

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt, pepper, and dried oregano.
  3. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until fully cooked and golden brown.
  4. Remove the chicken from the skillet and let it rest for a few minutes.
  5. In the same skillet, add the sliced mushrooms and minced garlic. Sauté until the mushrooms are golden and tender, about 5 minutes.
  6. Slice the cooked chicken and return it to the skillet, mixing it with the mushrooms.
  7. Serve the chicken and mushrooms on a plate, topped generously with pico de gallo.
  8. Garnish with fresh cilantro and enjoy!
