Ingredients:

  • 1 lb ground beef
  • 1/2 cup finely chopped onions
  • 1/2 cup finely chopped bell peppers
  • 1/2 cup crushed tortilla chips
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced tomatoes
  • 1/4 cup diced pineapple
  • 1/4 cup ketchup
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground beef, chopped onions, bell peppers, crushed tortilla chips, shredded cheese, diced tomatoes, diced pineapple, ketchup, egg, minced garlic, cumin, chili powder, salt, and pepper.
  3. Mix the ingredients until well combined.
  4. Transfer the mixture into a loaf pan and shape it into a loaf.
  5. Bake in the preheated oven for about 1 hour, or until cooked through and the internal temperature reaches 160°F (70°C).
  6. Let the meatloaf rest for 10 minutes before slicing.
  7. Garnish with fresh cilantro and serve with additional crushed tortilla chips on the side.
