Ingredients:

  • 1 cup rolled oats
  • 1/2 cup natural peanut butter
  • 1/2 cup honey or maple syrup
  • 1/4 cup cocoa powder
  • 1/2 cup chopped mixed nuts (almonds, walnuts, cashews)
  • 1/2 cup pitted dates, chopped
  • 1/4 cup protein powder (vegetarian-friendly)
  • 1/4 tsp sea salt
  • 1 tsp vanilla extract

Instructions:

  1. In a large mixing bowl, combine the rolled oats, cocoa powder, protein powder, and sea salt.
  2. In a separate bowl, mix the peanut butter, honey (or maple syrup), and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and mix until well combined.
  4. Fold in the chopped nuts and dates until evenly distributed.
  5. Line an 8x8 inch baking dish with parchment paper and spread the mixture evenly into the dish, pressing down firmly.
  6. Refrigerate for at least 2 hours or until set.
  7. Once set, cut into bars and store in an airtight container in the fridge.
