Ingredients:

  • 1 cup okra, sliced
  • 1 can black beans, drained and rinsed
  • 1 cup tomatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 2 cups bok choy, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.
  2. Add the sliced okra and cook for about 5 minutes, stirring occasionally.
  3. Stir in the diced tomatoes, cumin, smoked paprika, salt, and pepper, cooking for another 3 minutes.
  4. Pour in the chicken broth and bring to a simmer. Let it cook for about 10 minutes.
  5. Add the black beans and chopped bok choy, stirring gently. Simmer for an additional 5 minutes until the bok choy is tender.
  6. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro if desired.
