Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 2 cups fresh cherries, pitted
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • Fresh parsley for garnish

Instructions:

  1. Heat olive oil in a large pot over medium-high heat. Season the chicken thighs with salt and pepper, then add them to the pot, skin-side down. Sear until golden brown, about 5-7 minutes, then flip and cook for another 5 minutes. Remove the chicken and set aside.
  2. In the same pot, add sliced onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
  3. Add the pitted cherries, chicken broth, balsamic vinegar, honey, and thyme to the pot. Stir well to combine.
  4. Return the chicken thighs to the pot, nestling them into the cherry mixture. Bring to a simmer, then cover and reduce the heat to low. Cook for about 30 minutes, or until the chicken is cooked through and tender.
  5. Taste and adjust seasoning with salt and pepper as needed. Garnish with fresh parsley before serving.
