Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef or Italian sausage
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish (optional)

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Add the ground beef or Italian sausage to the pot, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  4. Stir in the crushed tomatoes, broth, dried basil, oregano, salt, and pepper. Bring to a simmer.
  5. Add the broken lasagna noodles to the pot and cook according to package instructions, usually about 10-12 minutes, until al dente.
  6. Once the noodles are cooked, stir in the ricotta cheese and half of the mozzarella cheese until melted and well combined.
  7. Serve hot, topped with the remaining mozzarella cheese, grated Parmesan cheese, and fresh basil if desired.
