Ingredients:

  • 2 white fish fillets (such as cod or haddock)
  • 8 oz pasta (such as penne or fusilli)
  • 2 medium potatoes, diced
  • 2 cups cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • 4 cups vegetable or fish broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and diced potatoes to the pot. Sauté for another 5 minutes until the potatoes start to soften.
  3. Pour in the broth and bring to a boil. Add the pasta and cook according to package instructions until al dente.
  4. Once the pasta is nearly cooked, gently nestle the white fish fillets on top of the pasta and add the halved cherry tomatoes.
  5. Cover the pot and let it simmer for 5-7 minutes, or until the fish is cooked through and flakes easily with a fork.
  6. Stir in the dried oregano, and season with salt and pepper to taste. If desired, garnish with fresh basil before serving.
