Ingredients:

  • 5 lbs baby back ribs
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cayenne pepper
  • 1 cup honey
  • 1/2 cup bourbon
  • 1/4 cup apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon ground mustard
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions:

  1. Preheat your oven to 300°F (150°C).
  2. Remove the membrane from the back of the ribs and pat them dry with paper towels.
  3. In a small bowl, mix together salt, black pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper.
  4. Rub the spice mixture all over the ribs, ensuring even coverage.
  5. Place the ribs on a baking sheet lined with aluminum foil, bone side down, and drizzle with olive oil.
  6. Cover the ribs tightly with another piece of aluminum foil to trap moisture and bake for 2.5 to 3 hours until tender.
  7. Meanwhile, in a saucepan over medium heat, combine honey, bourbon, apple cider vinegar, Worcestershire sauce, Dijon mustard, ground mustard, black pepper, and salt.
  8. Bring to a simmer and cook for about 10 minutes until slightly thickened.
  9. Once the ribs are done baking, remove them from the oven and brush generously with the honey-bourbon glaze.
  10. Increase the oven temperature to 400°F (200°C) and bake uncovered for an additional 20-30 minutes, basting with more glaze halfway through.
  11. Remove from the oven, let rest for a few minutes, then cut into portions and serve with extra glaze on the side.
