Ingredients:

  • 2 salmon fillets
  • 1 cup fresh peas (or frozen, thawed)
  • 1/2 cup walnuts, toasted
  • 1/4 cup fresh basil leaves
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon grated Parmesan cheese (optional)

Instructions:

  1. In a food processor, combine the peas, walnuts, basil, lemon juice, olive oil, and Parmesan cheese (if using). Blend until smooth, adding a little water if needed to reach desired consistency. Season with salt and pepper to taste.
  2. Heat a non-stick skillet over medium-high heat. Season the salmon fillets with salt and pepper.
  3. Add a drizzle of olive oil to the skillet. Once hot, place the salmon fillets skin-side down and cook for about 4-5 minutes, until the skin is crispy.
  4. Carefully flip the salmon and cook for an additional 3-4 minutes, or until cooked through and flakey.
